Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 1/2 cups peaches diced, fresh or canned, well drained
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • extra peaches for topping

Method
 

  1. Mix graham cracker crumbs with melted butter and press firmly into a pie dish, then chill for 15 minutes.
  2. Beat cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Whip the heavy cream until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture.
  5. Toss diced peaches with brown sugar and cinnamon.
  6. Fold half of the peaches into the cheesecake filling.
  7. Spread the filling into the chilled crust and smooth the top.
  8. Add remaining peaches and extra whipped cream on top.
  9. Refrigerate for 4–6 hours until set.

Notes

Store covered in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve chilled with extra peaches on top for a fresh, simple finish.
