No-Bake Pineapple Peach Icebox Cake

Ingredients
  

  • 2 sleeves graham crackers
  • 1 cup crushed pineapple drained well
  • 1 1/2 cups peaches diced, fresh or canned, drained
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • extra fruit for topping

Method
 

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Whip the heavy cream to stiff peaks in a separate bowl.
  3. Fold the whipped cream into the cream cheese mixture.
  4. Fold in half of the crushed pineapple and diced peaches.
  5. Spread a thin layer of cream mixture in a dish.
  6. Add a layer of graham crackers, then cream, then fruit.
  7. Repeat layers until all ingredients are used, finishing with cream on top.
  8. Top with extra pineapple and peaches.
  9. Chill for 6 hours or overnight until soft and sliceable.

Notes

Store covered in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve chilled with extra fruit on top for a fresh, sweet finish.
