Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 16 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 2 cups fresh strawberries diced
  • extra strawberries for topping
  • crushed graham crackers optional, for garnish

Method
 

  1. Mix the graham cracker crumbs with the melted butter until evenly combined.
  2. Press the mixture firmly into an 8x8-inch pan to form the crust and chill while preparing the filling.
  3. Beat the cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth and creamy.
  4. Whip the heavy cream to stiff peaks in a separate bowl.
  5. Fold the whipped cream into the cream cheese mixture gently.
  6. Fold in the diced strawberries.
  7. Spread the filling evenly over the chilled crust.
  8. Top with extra strawberries and crushed graham crackers if desired.
  9. Refrigerate for 4–6 hours until fully set, then slice and serve chilled.

Notes

Store leftovers in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve chilled with extra fresh strawberries or a sprinkle of graham cracker crumbs for added texture.
