Panzanella (Tuscan Bread and Tomato Salad)

Big juicy tomatoes, crisp-edged bread, and a tangy homemade dressing come together in the kind of salad that tastes like summertime in a bowl. Simple pantry staples and ripe produce create a hearty, rustic dish perfect for sharing with family and friends.

Ingredients
  

  • 2 1/2 pounds mixed ripe tomatoes cut into bite-size pieces
  • 2 teaspoons Diamond Crystal kosher salt plus more for seasoning
  • 3/4 pound ciabatta or rustic sourdough bread cut into 1 1/2-inch cubes
  • 10 tablespoons extra-virgin olive oil divided
  • 1 small shallot minced
  • 2 medium cloves garlic minced
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons white wine vinegar or red wine vinegar
  • freshly ground black pepper to taste
  • 1/2 cup packed basil leaves roughly chopped

Method
 

  1. Place chopped tomatoes in a colander set over a bowl and season with kosher salt.
  2. Toss tomatoes to coat and let drain at room temperature for at least 15 minutes, tossing occasionally.
  3. Preheat oven to 350°F and adjust rack to center position.
  4. Toss bread cubes with 2 tablespoons olive oil in a large bowl.
  5. Transfer bread cubes to a rimmed baking sheet.
  6. Bake bread about 15 minutes until crisp and firm but not browned.
  7. Remove bread from oven and let cool.
  8. Remove colander with tomatoes from bowl and place tomatoes in the sink.
  9. Add shallot, garlic, mustard, and vinegar to the bowl with tomato juice.
  10. Whisk constantly while drizzling in the remaining olive oil.
  11. Season dressing with salt and black pepper to taste.
  12. Combine toasted bread, tomatoes, and dressing in a large bowl.
  13. Add basil leaves and toss everything to coat evenly.
  14. Let salad rest for 30 minutes before serving, tossing occasionally until dressing is absorbed by the bread.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Serve alongside grilled chicken, simple pasta dishes, or fresh vegetables for a hearty meal.
