Method
- Place chopped tomatoes in a colander set over a bowl and season with kosher salt.
- Toss tomatoes to coat and let drain at room temperature for at least 15 minutes, tossing occasionally.
- Preheat oven to 350°F and adjust rack to center position.
- Toss bread cubes with 2 tablespoons olive oil in a large bowl.
- Transfer bread cubes to a rimmed baking sheet.
- Bake bread about 15 minutes until crisp and firm but not browned.
- Remove bread from oven and let cool.
- Remove colander with tomatoes from bowl and place tomatoes in the sink.
- Add shallot, garlic, mustard, and vinegar to the bowl with tomato juice.
- Whisk constantly while drizzling in the remaining olive oil.
- Season dressing with salt and black pepper to taste.
- Combine toasted bread, tomatoes, and dressing in a large bowl.
- Add basil leaves and toss everything to coat evenly.
- Let salad rest for 30 minutes before serving, tossing occasionally until dressing is absorbed by the bread.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Serve alongside grilled chicken, simple pasta dishes, or fresh vegetables for a hearty meal.
