Method
- Toast the sesame seeds in a frying pan over high heat for 2-3 minutes until golden, then remove and set aside.
- Add the honey to the same pan, bring to a boil until it foams, skim off the foam, then reduce heat and simmer until it reaches 125°C/260°F or passes the cold water test.
- Add the toasted sesame seeds and a pinch of salt to the honey and stir over medium heat for about 10 minutes until thickened.
- Remove from heat and stir in the lemon zest.
- Transfer the mixture into a parchment-lined round pan and spread evenly.
- Let cool for about 20 minutes, then cut into portions.
Notes
Store in an airtight container in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve alongside fresh fruit or yogurt for a simple, balanced snack.
