Ingredients
  

  • 1 3/4 cups sugar divided
  • 1 1/2 cups water
  • 3 1/2 teaspoons fresh-squeezed lemon juice divided
  • 1/2 teaspoon vanilla extract
  • 4 large ripe peaches halved and pitted
  • 2 10-ounce bags frozen sliced peaches thawed, alternative to fresh peaches
  • 1 cup frozen raspberries thawed
  • vanilla ice cream for serving

Method
 

  1. Combine 1 1/2 cups sugar, water, 3 teaspoons lemon juice, and vanilla extract in a wide, deep skillet and bring to a boil over medium-high heat, stirring until the sugar dissolves.
  2. If using fresh peaches, place peach halves in the boiling syrup and cook until tender, about 3 minutes per side.
  3. Transfer fresh peaches to a bowl with a slotted spoon, cool for 5 to 10 minutes, and slip off the skins.
  4. If using frozen sliced peaches, add thawed peaches to the boiling syrup, return to a boil, cook for 2 minutes, remove from heat, and cool in the syrup for 15 to 20 minutes.
  5. Combine raspberries, remaining 1/4 cup sugar, and remaining 1/2 teaspoon lemon juice in a blender and purée until smooth, about 2 minutes.
  6. Press the raspberry purée through a fine-mesh strainer to remove seeds if desired.
  7. Place two peach halves or 1/2 cup peach slices in each serving bowl.
  8. Add a scoop of vanilla ice cream to each bowl.
  9. Drizzle each serving with 2 tablespoons raspberry sauce and serve immediately.

Notes

Store leftover peaches and raspberry sauce separately in airtight containers in the refrigerator for up to 4 days. Serve with vanilla ice cream and drizzle generously with raspberry sauce just before serving for the classic Peach Melba presentation.
