Raisin Cupcakes

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 1 cup raisins
  • 1 tbsp flour for coating raisins

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Toss raisins with 1 tbsp flour to coat.
  3. Whisk together flour, baking powder, and salt in a bowl.
  4. Beat butter and sugar until light and fluffy.
  5. Add eggs one at a time, then mix in vanilla extract.
  6. Add dry ingredients alternately with milk, mixing just until combined.
  7. Fold in the coated raisins.
  8. Fill muffin liners about 3/4 full and bake for 18–22 minutes until golden.

Notes

Store cupcakes in an airtight container for a few days or freeze for longer storage. Serve with a glass of milk or a warm cup of coffee for a simple, comforting treat.
