Slow Cooker Creamy Garlic Parmesan Chicken

Ingredients
  

  • 4 chicken thighs or chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • 2 tbsp cream cheese optional
  • 2 tbsp fresh parsley chopped

Method
 

  1. Season the chicken with salt, black pepper, garlic powder, and onion powder.
  2. Heat olive oil in a skillet and sear the chicken for 2–3 minutes per side until lightly golden.
  3. Transfer the chicken to the slow cooker.
  4. Whisk together chicken broth, heavy cream, minced garlic, Italian seasoning, and Parmesan cheese.
  5. Pour the sauce over the chicken, cover, and cook on LOW for 5–6 hours or HIGH for 2½–3 hours until tender.
  6. Stir in cream cheese during the last 20 minutes if using.
  7. Spoon the sauce over the chicken and garnish with chopped fresh parsley.

Notes

Store leftovers in the fridge for up to 3–4 days or freeze for up to 3 months. Serve with mashed potatoes, rice, or crusty bread to soak up the creamy sauce.
