Strawberry Fool

Light, creamy, and bursting with fresh strawberry flavor, this Strawberry Fool is the kind of dessert that feels special without asking much of you. A handful of simple ingredients come together in just minutes, making it a wonderfully simple treat for any occasion.

Ingredients
  

  • 2 cups heavy whipping cream chilled
  • 1/2 teaspoon vanilla bean paste
  • 3 cups strawberries sliced
  • 1 tablespoon granulated sugar

Method
 

  1. Place the mixing bowl and wire whisk attachment in the refrigerator or freezer for 15–30 minutes to chill.
  2. Add the chilled heavy whipping cream and vanilla bean paste to the chilled mixing bowl.
  3. Mix on low speed to combine the vanilla bean paste with the cream.
  4. Gradually increase the mixer speed to high and beat until soft peaks form, scraping down the sides of the bowl halfway through.
  5. Continue beating until stiff peaks form, being careful not to overmix.
  6. Place half of the sliced strawberries into a medium bowl.
  7. Sprinkle the strawberries with granulated sugar.
  8. Mash the strawberries, leaving some larger chunks.
  9. Add the remaining sliced strawberries and let the mixture stand for a few minutes.
  10. Fold about one-third of the strawberry mixture into the whipped cream, taking care not to deflate it.
  11. Spoon some of the remaining strawberries into serving glasses or dishes.
  12. Add a layer of the whipped cream mixture.
  13. Add another layer of strawberries.
  14. Top with another spoonful of the whipped cream mixture.
  15. Garnish with any remaining strawberries and a sprig of mint if desired.
  16. Serve immediately or refrigerate until ready to serve.

Notes

Store covered in the refrigerator until ready to serve. Serve chilled and enjoy on its own or alongside fresh fruit, light sandwiches, or a simple tea or coffee service.
