Method
- Remove tops from strawberries and purée in a blender or food processor until smooth.
- Blend sugar into the strawberry purée for 30 seconds.
- Add lemon juice and kosher salt, then blend to incorporate and adjust to taste.
- Strain the purée and transfer to the refrigerator.
- Chill the strawberry purée for 2 to 3 hours until very cold.
- Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions.
- Transfer the sorbet to the freezer and freeze for 2 to 3 hours before serving.
Notes
Store the finished sorbet in a tightly covered freezer-safe container for up to 3 months. Serve scoops alongside fresh fruit, butter cookies, or light pound cake for an easy summer dessert.
