Strawberry Tiramisu

Ingredients
  

  • 1 lb fresh strawberries sliced
  • 2 tbsp sugar
  • 1 cup heavy cream cold
  • 8 oz mascarpone or cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla
  • 1-1 1/2 cups milk or strawberry milk
  • 1 pack ladyfingers or simple tea biscuits

Method
 

  1. Toss sliced strawberries with sugar and let sit for 10–15 minutes.
  2. Whip heavy cream to soft peaks.
  3. Beat in mascarpone, powdered sugar, and vanilla until smooth.
  4. Quickly dip each ladyfinger in milk.
  5. Line the bottom of a dish with dipped ladyfingers.
  6. Spread half of the cream mixture over the ladyfingers.
  7. Add a layer of strawberries.
  8. Repeat layers with remaining ladyfingers, cream, and strawberries.
  9. Cover and chill for at least 4 hours or overnight.

Notes

Store covered in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve chilled with a simple fruit side or a cup of coffee for an easy, comforting dessert.
