- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and salt in a bowl.
- Cream the butter and sugar until light and fluffy, then mix in the egg and vanilla extract.
- Add the crushed freeze-dried strawberries and optional food coloring, then gradually mix in the dry ingredients.
- Fold in the white chocolate chips.
- Scoop the dough onto the baking sheet and slightly flatten each cookie.
- Bake for 10-12 minutes until the edges are set and centers remain soft, then let cool before serving.
