Tzatziki (Cucumber Yogurt Dip)

Ingredients
  

  • 1.5 cups plain 2% Greek yogurt
  • 1 medium English or hothouse cucumber seeded, coarsely grated, squeezed dry (about 1 cup)
  • 2 small garlic cloves minced
  • 2 tablespoons extra virgin olive oil
  • 0.75 teaspoon salt scant
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons fresh mint finely chopped

Method
 

  1. Combine Greek yogurt, grated and squeezed cucumber, minced garlic, olive oil, salt, black pepper, and chopped mint in a medium bowl.
  2. Mix until well combined and smooth.
  3. Taste and adjust seasoning if necessary, adding a pinch of sugar if desired.
  4. Cover and chill until ready to serve.
  5. Before serving, drizzle with olive oil and sprinkle with fresh mint if desired.

Notes

Store in the refrigerator for up to 3–4 days and stir before serving. Serve with warm flatbread, fresh vegetables, or alongside grilled meats for a simple and satisfying spread.
