Method
- Heat olive oil in a large heavy pot or Dutch oven over medium heat until shimmering.
- Add chopped onions, increase heat to medium-high, and saute for 5 minutes while tossing regularly.
- Add garlic, carrots, russet potatoes, and sweet potato to the pot.
- Season with salt, harissa spice blend, coriander, cinnamon, and turmeric, then toss to combine.
- Cook the vegetables on medium-high heat for 5 to 7 minutes, stirring regularly with a wooden spoon.
- Add canned tomatoes, chopped dried apricot, and vegetable broth to the pot.
- Season with another small dash of salt and cook on medium-high heat for 10 minutes.
- Reduce heat, cover, and simmer for 20 to 25 minutes until the vegetables are tender.
- Stir in cooked chickpeas and cook on low heat for another 5 minutes.
- Stir in lemon juice and fresh parsley.
- Taste and adjust seasoning with more salt or harissa spice blend if desired.
- Transfer to serving bowls, drizzle with extra virgin olive oil, and serve hot with bread, couscous, or rice.
Notes
