Ingredients
  

  • 3-4 cucumbers thinly sliced
  • 1/2 tsp salt
  • 2 tbsp rice vinegar or lemon juice
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 clove garlic minced
  • 1/2 tsp chili flakes optional
  • 2 tbsp sesame seeds
  • 2 tbsp green onions chopped

Method
 

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Sprinkle with salt and let sit for 10–15 minutes to draw out excess water.
  3. Drain the cucumbers and gently squeeze out any extra moisture.
  4. Whisk together the rice vinegar or lemon juice, soy sauce, sesame oil, honey, minced garlic, and chili flakes in a small bowl.
  5. Pour the dressing over the cucumbers and toss until well coated.
  6. Sprinkle in the sesame seeds and chopped green onions, then toss again.
  7. Chill for 10–15 minutes if desired or serve immediately.
  8. Give it one last toss and serve cold.

Notes

Store leftovers in the fridge for up to 3–4 days and toss before serving. Serve chilled alongside simple grains, grilled meats, or light meals for a refreshing contrast.
