Ingredients
  

  • 2 cups soft pitted dates
  • 1/2 cup almond butter or peanut butter
  • 1/2 cup mascarpone or cream cheese
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee dissolved in 1 tbsp warm water
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil
  • unsweetened cocoa powder for dusting

Method
 

  1. Line a baking sheet with parchment paper and press the dates into a flat, even layer to form the base.
  2. Spread the almond butter evenly over the date layer.
  3. Mix the mascarpone, vanilla extract, and dissolved coffee until smooth, then spread over the nut butter layer.
  4. Melt the dark chocolate chips with coconut oil until smooth.
  5. Pour the melted chocolate over the top and spread evenly.
  6. Dust lightly with cocoa powder.
  7. Freeze for 1–2 hours until firm, then break into pieces and serve.

Notes

Store in the refrigerator for up to 3–5 days or freeze for longer storage. Serve chilled and enjoy with coffee or fresh fruit for a balanced treat.
