Ingredients
  

  • 1 whole small lemon thin-skinned, roughly chopped, seeds removed
  • 1 cup sugar
  • 1/2 cup butter softened
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • powdered sugar glaze to finish

Method
 

  1. Blend the chopped whole lemon and sugar in a food processor until smooth.
  2. Beat in the softened butter and eggs until fluffy.
  3. Fold in the all-purpose flour, baking powder, and salt until just combined.
  4. Pour the batter into a greased loaf pan.
  5. Bake at 350°F for 45–50 minutes.
  6. Cool the loaf completely.
  7. Drizzle with powdered sugar glaze to finish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve with coffee, tea, or fresh fruit for a simple, comforting treat.
