Ingredients
  

  • 2 cups heavy cream divided
  • 1/4 cup unsweetened cocoa powder
  • 6 ounces semisweet chocolate chopped
  • 1 1/2 cups whole milk
  • 3/4 cup granulated sugar
  • 1/8 tsp sea salt
  • 3 large egg yolks beaten
  • 1/2 tsp pure vanilla extract

Method
 

  1. Whisk together 1 cup heavy cream and cocoa powder in a saucepan.
  2. Bring the mixture to a boil, then reduce heat and simmer for 30 seconds while whisking constantly.
  3. Remove from heat and whisk in the chopped semisweet chocolate until smooth.
  4. Add the remaining 1 cup heavy cream and whisk to combine.
  5. Transfer the mixture to a large bowl and place a fine mesh strainer over the bowl.
  6. Whisk the egg yolks in a small bowl.
  7. In a saucepan over medium heat, whisk together whole milk, granulated sugar, and sea salt until slightly warm.
  8. Slowly whisk 1/2 cup of the warm milk mixture into the beaten egg yolks.
  9. Pour the milk and egg mixture back into the saucepan while whisking.
  10. Cook the custard over medium heat, stirring constantly with a spatula until it thickens and lightly coats the spatula.
  11. Pour the thickened custard through the fine mesh strainer into the chocolate mixture.
  12. Discard any residue left in the strainer and stir the mixture until combined.
  13. Add the vanilla extract and stir to combine.
  14. Cover and refrigerate the mixture for at least 6 hours or overnight.
  15. Churn the chilled mixture in an ice cream maker for 30–40 minutes until thick and frozen.
  16. Transfer the ice cream to an airtight container and freeze for at least 6 hours.
  17. Serve the homemade chocolate ice cream.

Notes

Store the ice cream in an airtight container in the freezer for up to 3 months. Serve with brownies, cookies, fresh berries, or waffle cones for an extra special dessert.
